WINTER SALAD

Winter Salad

  • 12oz of spinach or baby kale
  • 2 cucumbers, thinly sliced
  • 1 head of cauliflower, cut I florets
  • 1-14oz of chickpeas, drained
  • 1/4 cup of feta cheese, crumbled
  • 8oz of chicken breast, grilled
  • 1 avocado, sliced

Creamy Honey Mustard Dressing

  • 1 tbsp of Dijon mustard
  • 2 tbsp of honey
  • 1 tsp of apple cider vinegar
  • Juice of half of lemon
  • 1/2 tsp of garlic powders
  • 1/2 tsp of paprika
  • 3/4 cup of Lifeway Kefir
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Start y adding the cauliflower and chickpeas to a sheet pan, as olive oil and salt and roast for 30 minutes at 350. Make the dressing by icing all ingredients with a whisk or add them to a mason jar and shake vigorously until well combined. Layer all the salad ingredients in a bowl topping off with grilled chicken and avocado. Pour dressing on top and enjoy! If you are making this for meal prep, add the dressing to the bottom of the container, and layer all ingredients on top!
