Southwest Pasta Salad

This salad is a favorite in this house! Can be a side dish for all the warmer weather BBQ’s or you can add protein like chicken or shrimp if you want to make it more consistent for a lunch or quick dinner.

Southwest Pasta Salad

  • 1 pound of rotini pasta
  • 1 small red onion, chopped
  • 1 cup of cherry tomatoes, chopped
  • 1 cup of canned corn, drained
  • 1 cup of black beans, rinsed and drained
  • 1 medium red pepper, chopped
  • 1/4 cup of cilantro, chopped
  • Grilled chicken, cubed (optional)

Dressing:

  • 1 cup mayo
  • 1/2 cup sour cream
  • 1/3 cup canned chipotle pepper
  • 3 tbsp ranch seasoning
  • Juice of 1 lime
  • 2 tbsp olive oil

To make it: prep all your ingredients. Boil the pasta and let it cool off, chop the vegetables, drain the corn and black beans. Add all ingredients in a bowl. Then, make the dressing: in a blender, food processor or bullet add all the ingredients listed above and blend well until smooth. Pour the dressing on the pasta mixture. Add chicken or other protein of choice if wanted, mix well and enjoy!
