BLT Pasta Salad

BLT Pasta Salad

  • 1-16oz box of short pasta (I used rotini and cooked it AL DENTE)
  • 1 head of romaine lettuce (washed and chopped)
  • 1 cup of cherry tomatoes, sliced in half
  • 12oz of bacon, cooked crispy and chopped (I used thick applewood smoked bacon) 
  • 1 cup of croutons (optional)
For the dressing:
  • 1/2 cup of mayo
  • 1 tbsp of Dijon mustard 
  • 1 tbsp of Worcestershire sauce 
  • 1/4 cup of olive oil
  • 2 tbsp of red vinegar 
  • Juice of 1 lemon 
  • Salt & pepper to taste 
For the salad, in a large bowl mix the cooked pasta, lettuce, tomatoes, and bacon. In a shaker mix all the dressing ingredients vigorously until nicely blend and pour on top of salad. Mix well and top with croutons. Enjoy!
