SUMMER AVOCADO SALAD
Avocado Salad:
- 12 oz Spring Mix or baby spinach
- 1 cucumber, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup corn kernels
- 2 avocados, pitted and diced
- Protein of choice, I used grilled chicken
- 1/2 red onion, finely chopped
Avocado-Cilantro dressing:
- 1 cup Greek yogurt
- 1 avocado, peeled and pitted
- 1/2 cup olive oil
- 1/4 cup of red vinegar
- Squeeze of 1 lime
- 1 garlic clove, optional
- Salt and pepper to taste
To make the salad, prepare all the ingredients and place them on top of a bed of lettuce in lines. Just as you see in the video. To make the dressing,, add all of the ingredients in a bullet or food processor and pulse until creamy and smooth. Pour over salad or serve dressing on the side.
